Many people underestimate the health benefits that fish can provide. Fish is a low fat food that provides an abundance of vitamins and minerals, as well as protein. It also contains the Omega 3 fatty acid. This is an essential fatty acid that has been proven to help fight heart disease when included in a healthy diet. In fact, many health professional recommend eating fish twice a week. Finding a tasty fish recipe can sometimes be a challenge, which is why I have included four of my favorite fish recipes below. I hope you enjoy them!

Poached Citrus Salmon

Ingredients:
2 1/2 lbs skinless salmon fillet
1 qt chicken stock
1 qt orange juice
2 cups white wine
1 small yellow onion (chopped)
2 tbsp minced garlic
2 cups chopped lemon grass
1 tsp salt
1 tsp white pepper

Directions:
Cut the salmon into equal portions. In a large sauce pan, pour in the chicken stock, white wine, orange juice, onion, lemon grass, and garlic. Mix the ingredients together, then add in the salt and white pepper. Allow this mixture to boil for about five minutes, then reduce it to a low boil. Drop the salmon into the mixture and let it cook for about five minutes, or until it becomes tender and flaky.

Baked Cod

Ingredients:
1 cup seasoned croutons (crushed)
1 tbsp minced fresh parsley
2 cod fillets
1 tbsp ranch salad dressing
Butter-flavored spray

Directions:
In a bowl, mix together the parsley and crushed croutons. Baste the cod with ranch dressing, and then roll it in the crouton mixture. Spray with butter-flavored spray, then place it into a lightly greased 11 x 7-inch pan. Bake for 10 – 15 minutes at 400 degrees F, or until the fish has become flaky.

Fish Cakes (Catfish)

Ingredients:
1 lb catfish fillets
1 medium onion (chopped)
1 tsp prepared yellow mustard
1 tbsp creamy mayonnaise (recommend: Miracle Whip)
1/2 tsp Old Bay Seasoning
2 1/2 cups coarsely crushed Ritz crackers
1 egg
1 cup vegetable oil (to fry)

Directions:
Put the catfish into a sauce pan and add just enough water to cover the fish. Allow the water to come to a boil and cook the fish until it is well done. It should flake well with a fork. Drain out the water and mash the fish with a fork or potato masher. Add in the mustard, Old Bay seasoning, egg, cracker crumbs, onion, and salad dressing. Mix the ingredients well. Now you need to prepare the skillet for frying. Pour the oil in and bring it to a medium-high heat. Press the fish mixture into the shape of a patty and fry both sides in the oil until well done. Drain the excess grease using a paper towel.

Creamy Tilapia

Ingredients:
4 tilapia fillets
Butter-flavored spray
4 tsp margarine (melted)
2 tbsp lemon juice
2 tbsp chopped fresh dill weed
1 tbsp lemon-pepper seasoning
4 tsp cream cheese
5 tbsp lemon juice, or to taste
2 tbsp chopped fresh dill weed

Directions:
Grease a baking sheet and place the tilapia on the sheet. Give them a light spray with butter-flavored spray. Drizzle a bit of melted butter and lemon juice over each fillet. Season with lemon pepper as well as 2 tbsp dill. Bake at 375 degrees F for about 15 minutes, or until the fish is done. It should flake easily with a fork. While the fish is in the oven, mix together the cream cheese, 2 tbsp dill, and 5 tbsp lemon juice. When it is well mixed, microwave for just over a minute, then stir. Place the cooked fillets onto plates and spoon the sauce on top of the fillets.

One of the best fish stew recipes I learned is this one which is an easy dish to make with fantastic taste with only a few ingredients. The clam juice is what gives this recipe the tasty results. Easy to prepare and works best with Tilapia Fish, I am pretty sure you will find this absolutely delicious!

Ingredients
6 Tbsp olive oil
1 cup of chopped onions
2 large garlic cloves, chopped
2/3 cup fresh parsley, chopped
1 cup of fresh chopped tomato (about 1 medium sized tomato)
2 tsp of tomato paste.
8 oz of clam juice
2/3 cup dry white wine
1 1/2 lb Tilapia Fish fillets cut into 2-inch pieces
Touch of dry oregano, Tabasco, thyme, pepper
Salt

Method

1 Heat olive oil in heavy large pot over medium-high heat. Add chopped onion and garlic and saute for 4 minutes and you can also add some celery and mushroom at this point for added flavor. Add parsley and stir for 2 minutes. Add tomato and tomato paste and let cook for 2 minutes longer.

2 Add clam juice, dry white wine, and fish and simmer until the Tilapia fish is cooked through, that should be less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve.

This fish stew goes well with fresh bread and i should say it’s the prefect meal to compliment it. Preparing it with salad is also a great tasty idea. You can also be a little creative over this fish stew recipes as you can do things a little differently as you prefer such as increasing the amount of tomato paste. Or you can forgo the salt and substitute the clam juice with white wine for those with allergies to it, it will do but not as tasty. Or skip the tilapia fish altogether and substitute with 1 1/2 lbs of shrimp and scallops.

Any baked, grilled, fried, smoked, steamed, stewed, stuffed, glazed, broiled or what have you recipe there is, it ain’t Tilapia Fish Recipes if it has no Tilapia in it.

Now let’s get to know our fish.

Tilapia were originally found in Africa but today can be found to inhabit different fresh water habitats like streams, ponds, rivers and lakes around the world. They are tropical fish and can only stand temperatures abouve 55*F.

Some interesting and trivial facts about the fish that they rear their young on their mouths until they have grown enough to fend for themselves, The tilapia also, at some time, were released into the Kenyan waters to feed on mosquito larva to address malaria epidemic. They also played a role in the World War II as prime protein source for the poor. And one of its species, the Nile Tilapia also known as St. Peter Fish is also speculated to be the fish Jesus multiplied and fed to the masses at the Sermon on the Mount as the fish is native to the sea of Galilee.

Their appetite, quick growth and breeding, characteristics made the Tilapia the third only to carps and salmonids in the importance in aquaculture.

Tilapia farming has been around a couple and hal thousand years and it is said that farming the fist started in Israel. In 2002 tilapia production went up to 1,505,804 tons and today Taiwan is the largest exporter of Tilapia and the US and Japan being the largest consumers.

The comercial culture of tilapia is almost exclusive these 3 species:

Nile Tilapia (Oreochromis nilotica)

Of the three tilapia species that has the potential for aquaculture, the Nile Tilapia is the most comonly used species in tilapia in fish farming.

Blue Tilapia (Oreochromis aurea)

More at home in salty waters and lower temperatures, the blue tilapia is the next most cultured tilapia specie.

Black Tilapia or Java tilapia. (Oreochromis mossambica)

Very much like the Blue Tilapia in their spawning age and toleracen in salty water, their males grow faster than the other two mentions species.

General Buying Tips that applies only for the Tilapia Fish

Smell it!

The phrase ‘Smells fishy’ is actually to connote something that is not good and that is probably because whoever came up with that phrase probably only bought fish ‘late in the afternoon’ when they are no longer fresh, but most of the fish you will purchase would most probably come frozen. Fresh fish smells ’sweet’, it should smell a bit different but without the strong ‘fishy’ smell that means the fish is past its prime.

Fresh fish should not smell bad.

Look at it!

If it looks like fresh out of the water, firm flesh and bright eyes and red gills are signs of freshness. The eyes of the fish are the easiest indicators of freshness, if itis bloodshot, like say in tilapia fish or milk fish, then it might be a better idea to move along. Fillets should look bright without discoloration.

Freeze it!

Fish meat is very perishable and if you are going to freeze it for more than 2 days it should be wrapped well in freezer paper. Only thaw the fish when you are going to cook it, thawing and re-freezing is not a good idea.

Tilapia Fish Recipes Quick Tip: Remove the Muddy Taste -

Common with fish that includes vegetation in their diet, the tilapia fish has a somewhat muddy taste, though I myself have never encountered this muddy taste or i might have grown accustomed to it and probably is the very same flavor that i liked about the tilapia fish but i know others prefers the fish without this flavor.

So if you found this flavor not your liking then to counter act this muddy taste, a 15-20 minute marinating in buttermilk should sip out the unwanted taste out of the fish before going through your tilapia fish recipes.

Simple Caribbean Tilapia Fish

Here is a recipe that stands out above all other tilapia fish recipes. It is easy to prepare, and tastes delicious. The sweet flavor of the coconut and nice crunch of the macadamia nuts really gives the tilapia fish a family pleasing taste. You could also use other mild fish in place of the Tilapia.

My family doesn’t typically like fish. But, when I found a good price on tilapia fish at my local supermarket, I couldn’t pass it up. I did a little experimenting in the kitchen and came up with this recipe that I thought might go over well. When I served it, they all loved it. This is now my favorite of all my tilapia fish recipes. My husband who doesn’t even like fish even requests it once in a while!

Ingredients:

4-6 Tilipia fish fillets (fresh or thawed ok) 4 tablespoons butter, melted 1/2 cup finely chopped macadamia nuts 1/2 cup shredded coconut 2 tablespoons plain breadcrumbs 1 (8oz) can pineapple tidbits

Directions

Preheat oven to 400 degrees F. Line a baking sheet with foil and grease lightly. (Or spray with cooking spray) Place butter in large bowl and add tilapia fish- toss fish to coat; set aside. Combine macadamia nuts, coconut and breadcrumbs in a shallow bowl. Place fish in nut mixture and coat evenly. Place fish on baking sheet without overlapping. Bake for 18-20 minutes or just until fish is opaque throughout. Serve with pineapple tidbits. (Or if you would like to spend more time- make your own pineapple mango dressing)

I hope you enjoy this great tilapia fish recipe. This is a great recipe for get your family to eat more fish.

Fish batter recipes are by far the best when combined with a lean, textured fish. Varieties including Cat fish, Cod, Flounder, Haddock, and Perch are the most recognizable and the most chosen selection by consumers. Depending on the type of fish you intend to use, there are batter recipes that compliment each fillet and produce a wonderful combination of flavor and texture.

There are many other varieties of fish that go well with battered recipes. Typically, these can found at specialty markets or your local butcher. Species like Black Bass, Buffalo Fish, Drum, Sunfish, Tilefish, and Trout can also compliment a superb fish batter.

Batters are semi liquid mixtures containing flour or cornstarch. The formula forms a protective coating between fat and food and helps give the product color, flavor, and a crisp texture. There are many different variations for each batter to be used:

o Eggs may or may not be used for a pre-coat to flour dredging
o The thicker the batters, the thicker the coating.
o Using liquids such as beer, water, milk, and egg wash may be used
o Leavening products are often used to lighten the coating

-Baking Powder
-Egg Whites
-Carbonated beverages such as seltzer or any other sparkling water

Here are some basic fish batter recipes to get you started:

Beer Batter

2 Large eggs beaten
2 cups beer
10 oz cake flour
2 tsp Baking powder

12-08-2008

One of the more popular ways to prepare fish is to fry it. A novice chef can develop their own fish batter recipes with little to no experience. The first step in making a great batter is realizing that it’s not as simple as a cup of flour and water. That is not to say that a great batter is hard to make. On the contrary, it’s an easy and interesting cooking experience. The batter is just the body so to speak. The seasonings and flavors you add are what make the batter better. A good frying batter cannot be thin so it’s a good idea to start with a thick batter and thin as needed. A typical starting point for fish batter is:

1 cup flour
1/2 cup water
1 tsp salt
1 tsp baking soda
1 egg

Once a base batter has been established any number of great fish batter recipes can be created. A simple addition of a teaspoon of Old Bay Seasoning will lend a low country flavor to a fried fish dinner. A variety of herbs can be added to create a more earthy taste. Teaspoons of pepper and paparika are excellent seasonings to add to a base batter. Other herbs and spices that complement fish are tarragon, oregano, dill and mustard.

Beer batter is a very popular style of batter. There are many different types of beer from lagers to pale ales so using different beers offers many flavors to experiment with. The best results are achieved when the beer is warm and stale. Substitute the 1/2 cup stale beer for the water.
Creating a uniquely flavored fish batter does not necessarily require herbs. The following recipe is simple yet produces a very tasty fried fish fillet.

1 cup flour
1/2 cup crushed potato chips
1/2 cup water
1 tsp baking soda
1 egg

The battering process starts with cleaning the fish fillet and patting it dry with either a paper towel or clean cloth. The fillet is first dusted with dry flour and then dipped into the batter mixture. A second dusting of flour and batter dipping is not necessary but does create a more textured fillet.

Parmesan adds a cheesy flavor in the following batter version of a baked fish recipe.

1 cup flour
1/2 cup grated parmesan cheese
1/2 cup water
1 tsp lemon juice
1/2 tsp basil
1/8 tsp onion powder
1/8 tsp garlic powder (optional)
1/4 tsp black pepper
Salt to taste

The great thing about a fish batter is that it is very forgiving in the event that an experiment has gone wrong. Batters that are too thin can be thickened with more flour and batters that are too thick can be thinned with more water. To avoid seasoning mistakes, keep herb and spice measurements to a teaspoon or less. Start with 1/8 to 1/4 teaspoon measurements.

Experiment with the variety of herbs and spices that compliment fish dinners. Enjoy the creative process and have fun.

1; Garlic Cod or Monkfish. Time seven minutes

Take a piece of monkfish or cod of about eight ounces and place it in a microwave safe dish and cover with a microwave safe covering. Cook on full power for about two and a half minutes. Remove the fish from the microwave and leave to stand for two minutes. Crush a couple of cloves of garlic and scatter over the fish add a knob of butter and cook on full power for another minute and a half and remove from the microwave. Leave to stand for a couple of minutes and serve with some lemon and cracked black pepper butter. The works best with bigger shrimp, But which ever ones you use the flavours are always amazing.

5; Italian style Cod;

Take an eight ounce cod fillet and place it in a microwave dish. spoon the tomato and basil mixture over the fish. Cook on full power for four to five minutes. Remove the dish from the microwave and leave to stand for a couple of minutes. The fish will be infused with the basil and blends wonderfully with the tomato.
